We love making this easy pancake recipe over the weekends & we thought you'd love it too! We posted the recipe a few weeks ago on Instagram (here), but here is a step by step guide in blog post form!
The recipe is gluten-free & dairy-free and high in protein (we add vegan protein powder & egg whites). We like to add protein to keep us full and stabilize the sugar. All in all, they are both delicious, nutritious, and easy to make. What we also love about them is that they aren't too sweet, just the right amount! Let us know if you make these pancakes!
Ingredients (makes about 4 pancakes)
2.5 cups oatmeal
1 scoop protein powder (we use this one)
1/2 cup almond milk
1/4 cup egg white
splash of paleo vanilla creamer (Nut Pods is the best!)
dash of cinnamon
optional: blueberries, chocolate chips, chia seeds, oat-based whip cream, maple syrup
Add all ingredients to a blender & blend on high speed (*blend, then stir with spatula & repeat for a smooth, thick texture)
Add in optional mix-ins by stirring with a spatula (don't blend after adding mix-ins)
grease a pan with avocado oil & put on medium heat
(optional: refrigerate batter while pan is heating -- allows for EVEN fluffier cakes)
Pour small to medium sized circles of the batter onto pan & flip after ~2 minutes
Once done, serve on plate & any add toppings you'd like!
