Banana Nut Ice Cream Recipe

We are always on the hunt to find delicious deserts that gluten-free and dairy-free, because of our food allergies. A couple of weeks ago, I decided I was going to cook up a gluten-free & dairy-free dessert feast which included banana nut ice cream, blondie brownies, and chocolate chip cookies. Here is our recipe for our Banana Nut Ice Cream.

Banana Nut Ice Cream

Ingredients: Medjool Dates, Cocoa Powder, Cacao Powder, Almond Milk, Stevia Extract, Frozen Bananas, almonds, hazelnuts, macadamia nuts, & walnuts

1. Blend 4-5 Medjool dates & 2 handfuls of each nut.


2. Add 1/8 cup of cocoa powder and 1/8 cup of cacao powder to the blender. Once the powders are in the blender, pulse the blender until the mixture is crumbly. Now pour the mixture out of the blender and put it into a small bowl to save for later.

3. Add 3-4 frozen bananas to the blender and about 1/4 cup of almond milk. Add about 1/2 cup filled with ice. Then blend it up. (this is the ice cream base) Blend until it is creamy and thick. Add a few drops of stevia if If the ice cream tastes tart add a few drops of stevia extract to sweeten it up. Pour the ice cream into a bowl.

3. Before serving you can add in some extra nuts or any other toppings you'd like.
