5 Minute Gluten-Free Tacos

Happy Taco Thursday! Today we made the easiest and yummiest tacos for lunch. The second we tasted these tacos, we knew we had to share this recipe. The recipe is super easy & takes about 5 minutes. Using our ingredients, they are gluten-free & dairy-free.


The recipe is very self-explanatory & easy to follow. Additionally, while I offer suggestions about how much ingredients of each to use, build your tacos the way you like them! The most important part of this recipe is how I make the crunchy yet soft tacos!





Ingredients:

  • 2 grain-free tacos (we use these paleo tacos!)

  • 2 large tbs of Guacamole (or avocado)

  • Sliced or diced chicken (either cold cuts or grilled) -- add as much protein as you'd like!

  • 2 small handfuls of arugula

  • dairy-free cheese (we use this one)

  • Cilantro


Directions:

  • Take your soft tacos and place them in the oven. Place them in the shape you want. I use my toaster oven, which lets me hang the soft tacos on the racks, getting the perfect shape! Then, heat your oven to 300 degrees Fahrenheit, for about 5-7 minutes. Check after 4 minutes. I take mine out once the shape is formed but still somewhat soft!

  • While your tacos are being made, take out your other ingredients. Slice or dice your chicken.

  • Take your tacos out, and place them on the plate. Spread a large tbs of guac on each shell, getting the sides & bottom.

  • Grab a small handful of arugula and stuff it in the shell.

  • Add in your protein

  • Sprinkle on top your cheese & any other desired ingredients (I like hot sauce, pepper, olive oil, garlic, etc.)
